- 1 box pancake mix we used Simple Mills brand
- 5 large eggs
- ⅓ cup Water or milk
- 3 tablespoon oil
- ⅓ cup dairy-free chocolate chips
Preheat oven to 350 degrees F
Whisk together eggs, water and oil
Add in pancake mix and ½ chocolate chips
Evenly divide batter better muffin cups
Top with remaining chocolate chips
Bake for 9-15 minutes or until a toothpick comes out clean
