    Ingredients

    For the Chicken Salad:

    โ€ข 1 lb cooked, shredded chicken (breasts or rotisserie chicken)

    โ€ข ยฝ red onion, finely diced and soaked in water for 10 minutes to mellow the flavor

    โ€ข 1 handful fresh cilantro, chopped

    โ€ข 1 avocado, cubed

    For the Dressing:

    โ€ข 5 tablespoon cottage cheese

    โ€ข 3 tablespoon mayonnaise

    โ€ข 1 tablespoon onion powder

    โ€ข Juice of 3 limes

    โ€ข 1 handful cilantro

    โ€ข Salt and pepper to taste

    For the Cucumber Rolls:

    โ€ข 1 large English cucumber

    โ€ข 2 tablespoon whipped cream cheese

    โ€ข 4 oz chicken salad mix

    โ€ข Slices of onion and avocado for topping

    โ€ข Everything bagel seasoning (optional)

    โ€ข Chipotle hot sauce (optional)

    How to Make Chicken Salad Cucumber Rolls

    Prepare the Chicken Salad

    1. Start with 1 lb of cooked, shredded chicken. Shred it with two forks or dice it finely.

    2. Finely dice ยฝ red onion, soak it in 2 cups of water for 10 minutes to reduce sharpness, then drain.

    3. In a large bowl, combine the shredded chicken, onion, chopped cilantro, and cubed avocado.

    4. Blend the dressing ingredients: cottage cheese, mayonnaise, onion powder, lime juice, cilantro, salt, and pepper. Adjust seasoning to taste.

    5. Pour the dressing over the chicken mixture and toss until well combined.

    Prepare the Cucumber Rolls

    6. Thinly slice the English cucumber lengthwise using a vegetable peeler to create long, thin strips.

    7. Lay the cucumber slices on a piece of parchment paper, slightly overlapping by about โ…“ to create a flat sheet.

    8. Pat the cucumber slices dry with a paper towel.

    9. Spread 2 tablespoon of whipped cream cheese evenly over the cucumber sheet.

    11. Roll it up tightly, starting from the bottom. Fold over the toppings, press down gently, and roll carefully to ensure a compact roll.

    12. Slice the roll into bite-sized pieces with a sharp knife.

    13. Sprinkle with everything bagel seasoning and drizzle with chipotle hot sauce for an extra kick.
