Substitutions and Alterations
Season the breadcrumbs however you like. We just happen to enjoy Italian seasoning. Thyme, parsley, marjoram, chives, dill, all of those would work. Additionally, if you don't need to make this as a gluten-free recipe, feel free to use regular breadcrumbs and all-purpose flour.

Air Fryer Crispy Zucchini Chips
Equipment
- 1 Air Fryer
Ingredients
- 2 eggs
- 2 small zucchini
- â…” cup gluten-free breadcrumbs
- ¼ cup grated Parmesan cheese
- ¼ cup gluten-free flour
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- 1 cup gluten-free ranch dressing
Instructions
- Slice zucchini into ¼-inch thick slices.
- Add flour to a small bowl, beat eggs in a second small bowl, and combine breadcrumbs, Parmesan cheese, Italian seasoning and salt in a third bowl.
- Working in 2 batches, dip each slice of zucchini in flour followed by egg mixture allowing excess to run back into bowl. Coat in breadcrumb mixture and place in air fryer leaving a small amount of space between each zucchini slice.
- Air fry at 400ºF for 8-9 minutes. Repeat with remaining zucchini.
- Divide zucchini chips among 4 compartments of 4 MPOF snack containers. Divide ranch dressing among remaining 4 compartments.
